Dry Ingredients

½ cup sugar (white or brown sugar)

2 cups flour

½ tsp.salt

1 tbsp. baking powder

¼ tsp. ground cinnamon (optional)

Wet ingredients

1 cup creamy yogurt

1 egg

2 tbsp. milk

¼ cup vegetable oil

2 ripe bananas (chopped)

Vanilla extract (optional)

  1. Pull out two separate bowls: one for your dry ingredients, one for your wet ingredients.
  2. In a large bowl, combine the flour, sugar, baking powder, salt, and optional cinnamon. In the second bowl, combine the yogurt, egg, milk, and oil.
  3. Combine your wet and dry ingredients in the same bowl, then mix them all together.
  4. Add the ripe bananas to the mixture, then evenly divide the batter into a muffin tin.
  5. Bake the muffins in the oven at 400°F for 20 to 25 minutes, or until the tops are a nice golden brown.
